# How to Make It:
01 - Heat olive oil in a large skillet over medium heat. Add onion and cook for 2-3 minutes until softened. Add garlic and cook for 30 seconds.
02 - Add ground beef and cook, breaking up with a spoon, until browned throughout, approximately 5-6 minutes.
03 - Stir in cumin, chili powder, smoked paprika, oregano, salt, and pepper. Cook for 1 minute to bloom the spices.
04 - Add tomato paste and water, stirring to combine. Simmer for 3-5 minutes until slightly thickened. Remove from heat.
05 - Warm tortillas in a dry pan or microwave until pliable and easy to fold.
06 - Lay each tortilla flat. Layer evenly with rice, beans, beef mixture, cheese, lettuce, tomato, and sour cream. Sprinkle with cilantro if desired.
